Ingredients
  

For the apple and blackberry crumble

  • 1 lemon, zest and juice
  • 1 orange, zest and juice
  • 1.5 kg cooking apples (or 1kg cooking plus 500g eating apples)
  • 50-60 g golden caster sugar
  • 500 g blackberries

For the crumble topping

  • 100 g fine plain wholemeal flour (or plain flour)
  • 100 g ground almonds
  • 100 g porridge oats
  • 50 g soft light brown sugar
  • 150 g cold unsalted butter, diced (or 120g chilled coconut oil)
  • 100 g mixed seeds (such as poppy, flax and sunflower)
  • pinch salt

For the custard

  • 300 ml full-fat milk
  • 200 ml double cream
  • 1 vanilla pod, split, seeds scraped (or 2 teaspoon vanilla extract)
  • 4 free-range egg yolks
  • 25 g golden caster or soft light brown sugar
  • 2 teaspoon cornflour (optional)

Instructions
 

  • Preheat the oven to 180C/160C Fan/Gas 4.
  • To make the crumble, mix the orange and lemon zest and juice together in a large bowl. Peel, core and thinly slice the apples, tossing them in the juice occasionally.
  • Transfer the apples and juice to a saucepan and add the sugar. Cook over medium heat for 15 minutes until the apples collapse into a silky puree, then add the blackberries. Allow to cool completely.
  • To make the crumble topping, blend all ingredients except the seeds in a food processor until crumbly. Stir in the seeds and chill until needed.
  • Smooth the apple and blackberries in a baking dish and add the crumble topping in a chunky layer. Bake for 25-30 minutes until golden-brown.
  • To make the custard, heat the milk and cream with the vanilla. Cool for 10 minutes.
  • Beat the egg yolks, sugar, and cornflour together. Slowly pour in warm milk while whisking. Return to heat, stirring until thickened. Add vanilla extract if not using pod.
  • Serve the crumble with custard and enjoy!

Notes

Any extra crumble mix can be frozen and baked separately.
