Ingredients
  

Maple Mustard Dressing

  • cup olive oil
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon pure maple syrup
  • 2 teaspoons Dijon mustard
  • 1 clove garlic minced
  • Kosher salt to taste
  • black pepper to taste

Quinoa Salad

  • 3 cups fresh spinach leaves
  • 2 cups cooked quinoa
  • 1 ½ cups chopped apples Honeycrisp, Gala, or Fuji
  • cup dried cranberries
  • cup crumbled goat cheese or feta cheese
  • ½ cup chopped walnuts
  • Kosher salt to taste
  • black pepper to taste

Instructions
 

Dressing Preparation

  • In a small bowl or jar, whisk together the olive oil, lemon juice, apple cider vinegar, maple syrup, mustard, garlic, salt, and pepper. Set aside.

Salad Preparation

  • In a large bowl, add the spinach, cooked quinoa, apples, dried cranberries, goat cheese, and walnuts. Toss until salad is combined. Season with salt and black pepper, to taste.
  • Drizzle with dressing and toss again. Serve and enjoy!

Notes

This salad is perfect for lunch, dinner, or served as a side dish for Thanksgiving.
