Ingredients
  

  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 onion, finely chopped
  • 1 rib celery, finely chopped
  • ½ green bell pepper bell pepper, finely chopped
  • 1 lb ground chicken
  • 3 tablespoon cajun seasoning see note 1
  • 3 cloves garlic, minced
  • ½ cup crushed tomatoes
  • ½ tablespoon brown sugar
  • ½-1 teaspoon hot sauce optional
  • ½ cup heavy cream
  • ¼ teaspoon salt see note 2

Instructions
 

  • Melt the oil and butter in a large skillet over medium-low heat.
  • Add the chopped onion, celery, and bell pepper. Cook for 7-8 minutes until softened and cooked down.
  • Add the chicken and cook, breaking it up as you go. Give it 5 minutes to change color, then sprinkle over the Cajun seasoning and minced garlic.
  • Cook for a minute, but don't allow the garlic to change color.
  • Add the tomatoes, brown sugar, hot sauce, and cream, mix well, then reduce the heat to low.
  • Cook for 15 minutes, stirring frequently to ensure it doesn't catch on the bottom of the skillet.
  • Taste your mixture and add the salt to taste.
  • Toast your rolls and serve.

Notes

Use your homemade cajun blend or one your family loves. Depending on your cajun seasoning, you may need more or less salt. Adjust cooking time based on desired consistency.
