Cajun Potato Soup

Main Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion, small diced (about 1 ½ cups)
- 1 medium green bell pepper, small diced (about 1 cup)
- 1 medium red bell pepper, small diced (about 1 ¼ cups)
- 1 medium jalapeño pepper, small diced (remove seeds before dicing if less spicy, about ¼ cup)
- 3 cloves garlic, minced
- 1.25 teaspoons Old Bay or Cajun seasoning with salt
- 1 teaspoon smoked paprika
- 0.25 teaspoon freshly ground black pepper , plus more as needed
- 12 ounces andouille sausage, halved lengthwise then thinly sliced crosswise
- 1 pound Yukon gold potatoes, small diced (about 2 ¾ cups)
- 32 ounces low-sodium chicken broth (4 cups)
- ¾ cup heavy cream
- Salt
- Finely chopped fresh chives for garnish (optional)
Cooking Instructions
In a large pot, heat olive oil over medium heat.
Add the diced onion, green bell pepper, red bell pepper, and jalapeño. Sauté until the vegetables are tender, about 5-7 minutes.
Stir in the minced garlic, Old Bay seasoning, smoked paprika, and black pepper. Cook for another minute until fragrant.
Add the sliced andouille sausage and cook until browned, about 5 minutes.
Add the diced potatoes and chicken broth. Bring to a simmer and cook until the potatoes are tender, about 15-20 minutes.
Stir in the heavy cream and season with salt to taste. Heat through for another 5 minutes.
Serve hot, garnished with fresh chives if desired.
