Ingredients
  

Main Ingredients

  • 2 tablespoon olive oil
  • 2 medium sweet onions thinly sliced
  • 1 teaspoon kosher salt
  • 1 apple apple diced small
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried
  • 1 tablespoon balsamic vinegar
  • ¼ cup apple jelly
  • 4 oz goat cheese softened
  • 2 tablespoon heavy cream
  • 1 sheet frozen puff pastry thawed
  • fresh thyme for topping

Instructions
 

Cooking Instructions

  • Heat olive oil in a large pan over medium heat. Add onions and salt, cook until golden brown, about 15-20 minutes.
  • Lower heat and add apple and thyme, stir to combine. Cook 5 minutes longer until apples are tender.
  • Add balsamic vinegar and apple jelly, stir to combine, then remove from heat and let cool.
  • Preheat your oven to 375F.
  • Stir together goat cheese and heavy cream in a small bowl until smooth.
  • Grease a 24-cup mini muffin tin, roll puff pastry into a 10x15 inch rectangle, cut into 24 squares, and fit each into a muffin tin cavity.
  • Divide onion mixture evenly among muffin cups, top with goat cheese mixture.
  • Bake for 20-22 minutes until cheese and pastry are golden brown.

Notes

These tarts can be prepared ahead of time and baked just before serving.
