Chocolate Orange Cheesecake

Base
- 250 g vanilla wafers
- 150 g melted butter
Filling
- 575 g fromage blanc (or quark)
- 60 g mascarpone cheese
- 200 g Lindt Excellence chocolate bars, chopped
- 130 g sugar
- 100 ml orange juice
- 4 pcs eggs
Preparation
Place the vanilla wafers in a food processor and grind finely. Add the melted butter and process until the mixture comes together.
Spread the mixture evenly over the base of a greased 25cm springform pan and smooth with the back of a spoon. Cover with aluminum foil.
Preheat the oven to 120°C (250°F).
Stir the cream cheese until smooth to prevent lumps.
Add the mascarpone and sugar, and stir until smooth.
Cooking
Pour the orange juice into a saucepan and slowly bring to a boil. Add the chopped chocolate, remove from heat, and stir until melted.
Fold the chocolate and orange mixture into the cream cheese mixture. Gradually add the eggs, mixing well after each addition.
Pour the cream cheese mixture into the prepared springform pan. Place the springform pan inside a larger baking dish to create a water bath. Fill the larger dish with boiling water and place it in the oven.
Bake for approximately 45 minutes.
