Ingredients
  

Pizza Crust

  • 3.25 cups all-purpose flour (spooned & leveled)
  • 0.5 cup yellow cornmeal
  • 1.25 teaspoons salt
  • 1 tablespoon granulated sugar
  • 2.25 teaspoons instant yeast (1 standard packet)
  • 1.25 cups warm water (slightly warm)
  • 0.5 cup unsalted butter (divided; ¼ cup melted, ¼ cup softened to room temperature)
  • olive oil for coating

Tomato Sauce

  • 2 tablespoons unsalted butter
  • 1 small onion (grated, about ⅓ cup)
  • 0.75 teaspoon salt
  • 1 teaspoon dried oregano
  • 0.5 teaspoon crushed red pepper flakes (optional)
  • 3 cloves garlic (minced)
  • 28 ounces crushed tomatoes 1 can
  • 0.25 teaspoon granulated sugar

Toppings

  • 4 cups shredded mozzarella cheese
  • 0.5 cup grated parmesan cheese
  • 0.5 cup sliced pepperoni (optional)
  • 4 slices bacon (cooked and crumbled, optional)

Instructions
 

Preparation

  • Read through the recipe completely before beginning. You will need two deep dish 9×2-inch round cake pans.
  • Combine flour, cornmeal, salt, sugar, and yeast in a bowl. Add warm water and melted butter. Mix ingredients until moistened and knead until the dough is smooth.
  • Form dough into a ball and place in a greased bowl, cover tightly, and let rise until doubled in size, about 1-2 hours.
  • Roll dough into a 15×12-inch rectangle, spread with softened butter, roll up lengthwise, and cut into two pieces. Let rise in the refrigerator for 1 hour.
  • Melt butter in a saucepan, add onion, salt, oregano, and red pepper flakes, and cook until onion is browned. Add garlic, tomatoes, and sugar, and let simmer for 30 minutes.
  • Preheat oven to 425°F (218°C).
  • Roll out the first ball of dough into a 12-inch circle and press into the cake pan. Fill with half of the cheese, pepperoni, bacon, and pour in sauce. Repeat for second pizza.
  • Place pans on a baking sheet and bake for 20-28 minutes until crust is golden brown. Allow to cool for 10 minutes before serving.

Notes

Dough may be prepared through step 4 and frozen. Complete freezing instructions are noted.
