Ingredients
  

Lemon Curd

  • 4 large egg yolks
  • 4 large eggs
  • 0.25 teaspoon sea salt
  • 1.25 cup granulated sugar
  • 2 lemons zested
  • 0.67 cup lemon juice freshly squeezed (from about 2-3 lemons)
  • 0.5 cup unsalted butter

Lemon Syrup

  • 0.5 cup water
  • 0.25 cup granulated sugar
  • 1 lemon peeled and juiced
  • 1 sprig basil optional
  • 0.25 cup limoncello optional

Filling

  • 1.5 cup heavy whipping cream cold
  • 1.5 cup lemon curd about half of the prepared
  • 1 lb mascarpone cheese room temperature

Assembly

  • 2 packs ladyfingers
  • lemon slices for decorating

Instructions
 

How to make Lemon Curd

  • Combine egg yolks, whole eggs, salt, sugar, lemon zest, and lemon juice in a medium saucepan. Whisk to combine.
  • Heat on medium heat, whisking constantly until the mixture thickens and simmers, about one minute.
  • Strain the curd through a wire strainer or cheesecloth to remove any zest and lumps.
  • Add butter to the curd and let sit for a minute to melt, then stir until smooth.
  • Cover and refrigerate until cold and thickened.

Lemon Syrup Preparation

  • Combine water, sugar, lemon juice, lemon zest, and basil in a saucepan.
  • Bring to a simmer, let cool, then strain out the lemon peels.
  • If using limoncello, add it to the syrup.

Filling Preparation

  • Chill the mixing bowl and whisk for 5 minutes, then whip the cream until stiff peaks form.
  • In a large bowl, combine half of the cooled lemon curd and all mascarpone cheese, whisk until smooth.
  • Gently fold the whipped cream into the lemon curd mixture.

Assembly

  • Layer ladyfingers with the lemon curd filling and repeat, then chill for at least 8 hours before serving.
  • Decorate with lemon slices before serving.

Notes

This cake needs to chill for 8 hours or overnight to set, making it perfect for preparing ahead of time.
