Ingredients

Fish and Sauce Ingredients

  • 2 fillets salmon, preferably skin-on 10 ounces total
  • Kosher salt to taste
  • black pepper to taste
  • ¼ cup thinly sliced oil-packed sun-dried tomatoes
  • 2 tablespoons oil from the jar of sun-dried tomatoes
  • ½ medium yellow onion, finely chopped
  • 1 teaspoon dried oregano plus more to taste
  • ½ to 1 teaspoon crushed red pepper plus more to taste
  • 2 tablespoons tomato paste
  • 1 bottle clam juice 8 ounces (1 cup)
  • ½ cup heavy cream

Instructions

Cooking Steps

  • Pat the salmon dry and lightly sprinkle salt and pepper all over.
  • Heat a medium nonstick or cast-iron skillet over medium-high, then add 1 tablespoon of oil from the jar of sun-dried tomatoes.
  • Sear the salmon skin side down until browned and crisp, about 5 to 7 minutes. Transfer to a plate skin side up.
  • Reduce the heat to medium. Add the onion to the skillet and season with salt. Cook until softened, about 5 to 7 minutes.
  • Reduce the heat to medium-low. Add 1 tablespoon sun-dried tomato oil, oregano, and crushed red pepper, stirring to bloom flavors. Add the tomato paste, stirring until slightly darkened, about 3 minutes.
  • Add the clam juice, raise heat to medium-high, and reduce by half, about 4 to 5 minutes. Add cream and sun-dried tomatoes, stirring until slightly reduced, about 5 minutes.
  • Return the salmon to the skillet flesh side down. Simmer until cooked through, about 1 minute.
  • Serve topped with basil leaves, if using.

Notes

Serve with crusty Italian bread or your favorite pasta to soak up the sauce.
