Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour plus more for the pan
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.75 teaspoon ground cardamom or to taste

Wet Ingredients

  • 1 cup extra-virgin olive oil plus extra for the pan
  • 1.5 cups granulated sugar
  • 3 large eggs
  • 2 tablespoons fresh orange juice
  • 2 oranges grated zest
  • 1.25 cups whole milk or plant-based alternative
  • 2 tablespoons sifted confectioners’ sugar for garnish

Instructions
 

Preparation

  • Position a rack in the center of the oven and preheat the oven to 350°F.
  • Brush the bottom and sides of a 9-inch round cake pan with olive oil, line with parchment paper, and dust with flour.

Mixing

  • In a medium bowl, whisk together the dry ingredients.
  • In a large bowl, combine granulated sugar, cardamom, and eggs. Beat until thick and fluffy, then slowly drizzle in olive oil and beat until incorporated. Add orange zest, orange juice, and milk, and beat until smooth.
  • Add the flour mixture to wet ingredients and mix on low until uniform.

Baking

  • Pour the batter into the prepared pan, sprinkle with granulated sugar, and bake for 40-45 minutes or until the center is set.
  • Allow the cake to cool for 30 minutes, then invert onto a plate and cool completely on a rack.

Serving

  • Before serving, dust with powdered sugar and sprinkle with orange zest.

Notes

Olive oil keeps cakes tender and moist longer. This cake can be made ahead for holiday menus.
