Steak Ingredients

  • 2 pieces Ribeye or New York strip steaks (12 oz each) about 1 ¼-inches thick
  • 1 tablespoon vegetable oil
  • 1 teaspoon kosher salt
  • ¾ teaspoon freshly ground black pepper
  • 2 tablespoon unsalted butter
  • 2 sprigs fresh thyme
  • 2 cloves garlic peeled and smashed

Cooking Instructions

  • Let steaks rest at room temperature for 30 minutes.
  • Heat vegetable oil in a 12-inch cast iron skillet over medium-high heat, until the oil is shimmering.
  • Dab both sides of the steak dry with paper towels, then season both sides with salt and pepper.
  • Place steaks in skillet and press down using metal tongs to ensure contact with the skillet.
  • Let cook until browned on the bottom, about 3 minutes.
  • Flip and continue to cook until steak is about 10 degrees away from desired doneness, approximately 3 minutes longer.
  • Reduce heat to medium-low, add butter, garlic, and thyme.
  • Grasp the pan with oven mitt and tilt so butter pools to one side. Spoon butter over steaks and continue cooking until desired doneness, about 1 minute longer.
  • Transfer to plates and let rest for 5 minutes before slicing.

Notes

If you don't have thyme, try rosemary or omit it altogether. Cooking temperatures should be monitored as steaks will rise another 5 degrees after cooking.
