Slow Cooker White Wine Chicken Stew

Ingredients
  

  • 1 tablespoon olive oil
  • 1.5 pounds boneless skinless chicken thighs, cut into 1 inch pieces
  • Freshly ground salt and pepper
  • 2 cups chicken broth
  • 0.5 cup dry white wine * If desired, can substitute with more chicken broth
  • 1 tablespoon worcestershire sauce ** Ensure gluten free if necessary
  • 1 teaspoon balsamic vinegar
  • 2 teaspoons chopped fresh rosemary (fresh is best!)
  • 2 teaspoons chopped fresh thyme (fresh is best!)
  • 0.5 teaspoon dried oregano
  • 1 teaspoon salt plus more to taste
  • Lots of freshly ground black pepper
  • 6 cloves garlic, finely minced
  • 1 large yellow onion, cut into chunks
  • 3 large carrots, peeled and cut into ½-inch diagonal slices
  • 1 pound yukon gold potatoes, diced into ½ inch cubes
  • 0.25 cup all purpose flour (or sub all purpose gluten free flour)
  • 0.5 cup unsweetened almond milk (or heavy cream or regular milk will work)
  • 0.67 cup frozen peas

Instructions
 

  • Add 1 tablespoon olive oil to a large skillet, place over high heat. Add chicken pieces, season with salt and pepper, brown the meat for about 5-6 minutes. Transfer to a slow cooker.
  • In the slow cooker with chicken, add chicken broth, dry white wine, worcestershire sauce, balsamic vinegar, thyme, rosemary, dried oregano, salt and pepper. Stir until combined, then add garlic, onion, carrots and potatoes. Cover and cook on low for 7-8 hours or on high for 4-5 hours.
  • Remove ½ cup chicken broth, transfer to a medium bowl, stir in ½ cup of milk, whisk in ¼ cup flour until smooth. Add back to slow cooker, stir, then add frozen peas. Cook uncovered on HIGH for 15-20 more minutes until thickened. Serve immediately.

Notes

Substitute 1 ½ teaspoons of Italian seasoning for fresh herbs if desired. Wine can be replaced with more chicken broth.
