Ingredients
  

  • 1 30-32 Ounce Bag Frozen Tater Tots
  • 16 Ounces Diced Ham *** SEE NOTE ON MEAT
  • 1.5 Cups Shredded Cheddar Cheese
  • 1 Cup Shredded Mozzarella or Monterrey Jack Cheese
  • 8 Large Eggs
  • 0.5 Cup Milk
  • 1 Cup Sour Cream
  • 0.5 Teaspoon Salt
  • 0.5 Teaspoon Pepper
  • 0.5 Teaspoon Garlic Powder
  • 0.5 Teaspoon Onion Powder
  • 1-2 Teaspoons Hot Sauce Optional

Instructions
 

  • Preheat oven to 375 degrees. Spray a 9x13 inch baking dish with non-stick cooking spray.
  • Place the tater tots, diced ham, 1 Cup of cheddar, and 1 Cup of mozzarella into the baking dish. Toss with your hands to combine.
  • In a large bowl whisk together the eggs, milk, sour cream, seasonings, and hot sauce if using.
  • Pour the egg mixture over the tater tot mixture in prepared pan.
  • Bake in preheated oven for 45 minutes, until golden brown. Top with remaining ½ Cup of cheese and return to oven for 5 more minutes until melted.

Notes

NOTE: Oven temperatures do vary, this casserole will be golden brown, puffy, and set in the middle when it's finished. NOTE ON MEAT: You can also use 1 pound of cooked/crumbled bacon or 1 pound of cooked and crumbled breakfast sausage instead of ham. Or, skip the meat and add beans or veggies for a vegetarian option. This casserole can be assembled and refrigerated unbaked for up to 12 hours. After baking, it is good in the refrigerator for up to 3 days. You can make this casserole and freeze it. Bake as directed, allow to cool completely, then cover tightly in foil and freeze for up to 2 months. Thaw in the refrigerator overnight before baking.
